OMeGa granola

If you've read any part of my blog, chances are that you know I'm a breakfast addict. Anything from cereal to Eggs Benedict, you'll have a happy Abbi. Like seriously, whoever thought up the first breakfast menu was a genius. That being said, I've been trying to spend a little less money on processed foods by incorporating my own recipes from scratch (cause if I buy cereal, it'll be gone in two days which is not really the best.)

Anyway, pinterest never fails to inspire me, and I decided to finally try some of the granola recipes that I pinned while bored in my Comm 360 class last quarter. I experimented with a few and came up with this recipe. The mix-ins help you get those really good omega 3 fatty acids through the pumpkin seeds, chia and walnuts. It's a perfect grab and go snack or on top of a smoothie for a little crunch.

Give it a whirl:

3 cups oats

1 tsp cinnamon

1/2 cup pumpkin seeds

3/4 cup chopped walnuts

3/4 cup chopped pecans

1/4 cup chia seeds

1/4 tsp salt

1/4 cup maple syrup

1/4 cup almond butter

1/4 coconut oil

1 Tbls. vanilla extract

1 tsp. almond extract

1) Mix the oats, cinnamon and nuts together with salt and set aside.

2) In a medium bowl mix melted coconut oil, almond butter, maple syrup, vanilla, and almond.

3) Poor melted mixture over the oats and coat thoroughly.

4) Spread granola onto a larger baking pan and bake at 300 for 40 minutes. Stir the mixture every 15 to keep it from burning.

5) Add raisins or chocolate chips afterwards if you so desire.

6) Eat it and love it
