Grab n' Go Energy Cookies

Cliff bars have always been a favorite snack of mine. They are so easy to grab on the go and perfect for those long bike rides, hikes, or boring history classes. I'm in love with the white chocolate macadamia nut ones, and can't seem to get enough.....which is the problem. Really Cliff bars are nothing more than a glorified candy bar. Don't get me wrong, they are delicious, but also wallet draining.
I've been experimenting around though to figure the best way to make them on my own that's a bit cheaper and a healthier alternative...put good in, get good out, am I right? ;)
Alrighty so here it is, easy homemade cliff bars/ breakfast cookies:
2 cups quick oats
3/4 tsp salt
1 tsp cinnamon
1 cup almond butter
1/4 cup maple syrup
1 large banana
1 cup mix-ins (pumpkin seeds, raisins, chopped nuts..whatever you like!)
1) mash up that nanner and mix in the maple syrup and almond butter (or nut butter of choice)
2) stir in the oats, salt and cinnamon (I always double the cinnamon)
3) once you have that all toroughly mixed, glop them onto a greased pan and put those babies in the oven at about 350 degrees for 10 minutes!
